Food recalls are sometimes caused by the suspicion of the presence, or detection, of bacteria of the genus Salmonella. According to ANSES, salmonella infections are the second leading cause of foodborne illnesses in Europe. Salmonella causes acute gastroenteritis that usually resolves spontaneously within a few days. However, salmonella can be serious, even fatal, for:

Animals are often asymptomatic carriers of this bacterium which they transmit through their droppings. Foods of animal origin can therefore be contaminated. Raw or undercooked foods are the most affected: among others, eggs, meats and cheeses made from raw milk. Other foods can also be sources of contamination: vegetables, dried fruits, chocolate or even cereals.
