Food recalls are often caused by the suspicion of the presence, or detection, of Escherichia coli. While most of its strains are harmless, this bacterium can cause serious food poisoning. It is commonly found in the digestive tract of humans and warm-blooded organisms.

Severe foodborne illness caused by Escherichia coli resolves spontaneously in most cases. However, it can progress to a potentially fatal form such as hemolytic uremic syndrome (HUS). It is particularly dangerous for young children and the elderly. Symptoms are abdominal cramps and diarrhea, which in some cases progress to bloody diarrhea.

As Escherichia coli is a heat-sensitive bacterium, it is therefore necessary to pay attention to the cooking of its food. The main causes of Escherichia coli outbreaks are raw or undercooked ground meat, raw milk and faecal contamination of vegetables.
