Crêpes: a chef’s original recipe with just one ingredient

It is one of the great classics of gastronomy. The pancake recipe has the advantage of being simple to make and always delighting the taste buds of its guests. However, there is an even easier recipe to make that only requires one ingredient.

In addition to being very simple, it also allows you to discover other flavors and therefore to vary from the usual pancakes. Invented by private chef Alfredo Vozmediano Romero, this recipe has its place on the menu of the best restaurant in the world.

The cook has indeed worked at Noma, an establishment in Copenhagen, Denmark, named the best restaurant in the world on several occasions by the 50 Best and three stars by the Michelin Guide.

Alfredo Vozmediano Romero revealed the secret of this recipe on his Instagram account. To make it, all you have to do is grab a single ingredient, a bottle of whole milk.

Once this essential ingredient is in your hands, grab a non-stick pan and pour the amount of milk required corresponding to the size of the container. Pour it into the cold pan and bring it to a boil.

When the milk “starts to evaporate and create a film on the surface, put the fire on a very low temperature and let it caramelize slowly. It should reduce slowly for about 10 minutes”, he specifies on his account. Instagram.

The chef also explains that by sprinkling the pancake with water during cooking, it will be “much more flexible and will have a more moist texture”. Once the crepe is ready, all you have to do is take it off the pan without even cooking it on the other side.

Now all that remains is to taste this dessert which, according to the chef, has “a flavor between caramel and milk jam”.
