The Rütli is open at the moment as the only Hotel on the zähringerstrasse, the doors. The six neighbors have not made dense, even though the Hotels fall under the corona-induced Lockdown. “Economically, our project makes less loss, than if the Hotel would be closed,” admits Ariane Oswald, “we achieved in April 2020, only one-tenth of the turnover compared to the previous year.”
Filippa Large, together with the two other future Hotel clerks, Nadine Lopez and Laila Schweingruber and hotel communications expert Leon Gähweiler the President of the hotel crew. “They organize themselves, and the service plans,” says Oswald. “The normal operation, they cope very well. In the case of difficult decisions, a fellow member of the squad, or I can help.”
Filippa assumes when joining the command from the night porter, the Breakfast in the Garni-Hotel. 20 of 58 rooms are occupied. Some of the guests want Room Service, resulting in a three-star-Superior-house practice is not usually in the big crisis, but no Problem. But now, a paradigm shift is underway. “I see good opportunities for us,” says Alexandre Spatz, Director of the Wellness hotel Golf panorama in Lipperswil. As the Rütli in Zurich, the Resort is located in the Canton of Thurgau guests. You back to work in the Hotel, enjoy the nature and relax – from Monday, also in the re-opened Wellness zone.
“In the first Lockdown of the week lived two or four guests with us, now thirty,” says Sparrow. He has sent his nearly 60-person Crew, in principle, short-time work, seven staff are available daily in the Hotel with 54 rooms and suites, in use. “We are all-rounder,” says the 40-Year-old, together with his wife Caroline at the Front. Sparrow, a trained chef, prepares the meals for the guests, in the Morning, force-supported by a service, at noon and in the evening by a chef. The Director sees the Positive: “The guests are very grateful and understanding, and I have never worked so closely with my people.” It is worthwhile economically to keep the Resort open, so Sparrow more. And: “We can now rehearse the new processes and the re-opening of Restaurants for the foreign guests.”
Hygiene and protection of the gastronomy of change
measures To the ever-popular Buffets, the front hand is not to think. “We will maintain our Sunday brunch, but from Buffet to A-la-carte Service switch”, announces Alexandre Sparrow, “and instead of the fish buffet on Friday night, we write a four-course fish menu.” Suddenly, the Director is in a hurry. The kitchen is waiting. For lunch, guests have the choice between a salad with Tête de Moine, Entrecôte with roasted potatoes or vegetables and truffle Fagottini. And although the word literally means “à la mode du chef”.
